orzo salad

Based on Giada's recipe (changed based on ingredients I had).

1 box orzo

3/4 red onion, chopped into tiny pieces
Romaine lettuce, chopped into tiny pieces
Scallions, chopped into tiny pieces
1 ball fresh mozzarella chopped into tiny pieces

1 pint grape tomatoes, chopped in half

Vinaigrette: red wine vinegar, olive oil, balsamic vinegar, honey, lemon juice

Spices: salt and pepper

Cook the orzo and drain, rinsing in cool water to cool. Mix with the veggies, cheese, vinaigrette, and spices.
